Preserving quality in Arouquesa Meat

Arouquesa-DOP Beef has been a Protected Designation of Origin (DOP) since 1994 and in compliance with its specifications a guarantee of quality and trust for the consumer. This is widely recognized as a unique product due to its organoleptic quality, closely linked to its origin as a breed, form of creation and the geographical area of production to which it is limited. However, the appreciation of this meat by the consumer is still not enough for its producers to keep this method of production economically profitable, and there is a gradual abandonment of it. To reinforce its value, it is necessary to improve the uniformity between carcasses originating from different producers and in some of them in different seasons of the year. To reduce the variability existing in carcasses, it is proposed to create a food supplement that contributes to balancing the diet available on farms, making the most of existing resources and that fundamentally preserves the physical-chemical and nutritional properties of Arouquesa-PDO Beef.
